REASONS WHY INSTANT NOODLES CAN BE PRESERVED FOR LONG

Recently, some media communications on instant noodles have given news that “Instant noodles can be preserved for long due to being fried in the oil that contains preservative TBHQ”.

As the top instant noodle manufacturer in Vietnam, Acecook Vietnam JSC. always commits to protect the rights of consumers by products of food safety and correct, transparent information as follows:

1/ Reasons why instant noodles can be preserved for 5 – 6 months?

First of all, instant noodles can be categorized into two main types: fried and non-fried noodles, based on the difference in production procedure. Both fried and non-fried noodles are steam-cooked by steam before heat treatment to reduce moisture in the noodles, preventing bacteria from growing so that instant noodles can be preserved for 5 – 6 months.

+ Fried noodles: the production procedure includes heat treatment by oil fry, after which noodle moisture is at approximately 2 – 6%.

+ Non-fried noodles: the production procedure does not include oil fry, heat treatment is done by drying, after which noodle moisture is at approximately 6 – 8%.

Both non-fried and fried noodles were following the CODEX STAN 249-2006 standard as set by International Codec Technical Committee and document TCVN 7879:2009 by General Department of Quality Measurement in Vietnam. Noodle products confirmed to have declaration suitable with these standards are considered safe (non-toxic). Depending on preferences of noodle fiber, flavor or processing method, users can choose to use fried noodles or non-fried noodles.

2/ Materials permitted to use in instant noodles.

Currently all instant noodle products of Acecook Vietnam are using materials of clear origins, selected from reputed suppliers with certificate of food sanitation and safety, strictly controlled from input to output.

All instant noodle products of Acecook Vietnam do not contain preservative TBHQ. All additives used are in the permitted list, fully declared on the package and the content complying with regulations of Vietnam Law as well as Codex standards of food safety. All products have quality declaration and confirmed by Department of Food Safety – Ministry of Health as “Declaration compliant with food safety regulation”.

Consumers can be assured to use the products of Acecook Vietnam or other reputed instant noodle manufacturers that have quality declaration compliant with food safety regulations, showing the safety, non-usage of toxic additives or the content harmful to the health.

* Categories and content of permitted additives used in instant noodles are clearly regulated in Circular “Instructions on management of food additives” no.27/2012/TT-BYT and no. 08/2015/TT-BYT.
